Spinach Lasagne

I was a bit daunted by all the Spinach arriving from Riverford. Then I read the recipe in Barbara Kingsolver Animal, Vegetable, Miracle and decided to try that. I liked the idea of cooking what is in season. And the spinach came in the veg box. I had most of the ingredients except ricotta and mozarella, so I just bought those.

I discovered I had no tins of tomatoes so used fresh tomatoes to make the sauce. That was surprisingly quick and easy – chop and fry and onion, add garlic, then add chopped fresh tomatoes plus some tomato puree and water.

I washed the spinach and chopped it roughly, then put it in a large pan (with no extra water. Very quickly it wilted.

Assembling the lasagne was rather quick and easy too. The sequence is a bit fiddly (see below for details). And it cooked in 30 minutes. (Our oven is playing up and tends to burn things at the moment-so I kept an eye on it.)

Sweet Potatoes

I decided to microwave one large sweet poatato. It was good – with butter and some grated red leicester. Rather like a baked potato but a bit sweeter. Made a v rapid suppe. Just what I needed before dashing out to SLJO.

Cook for the same amount of time as a baked potato. (About  3 minutes was fine in my microwave.)
